Blueberry and banana pancakes

These pancakes are brilliant way to get your kids to eat eggs.

Ingredients – makes 4 pancakes

  • Blueberries
  • 1 Large Egg
  • 1 Large Banana


  1. Peel and mash the banana with a fork, add the egg and mix until it forms a consistent mixture.
  2. Heat a frying pan on medium heat and melt a knob of butter/coconut oil.
  3. Pour a small cup full of mixture on to the frying pan and add the blueberries – cook on each side until light brown.
