Minestrone soup

Ingredients (serves 2)

  • 1 clove of garlic
  • 1 red onion
  • 2 celery stick
  • 1 medium courgette
  • 1 large carrot
  • 1 medium leek
  • 1 large potato
  • 6 rashes of bacon
  • 2 Tbsp extra virgin olive oil
  • 2 tin of plum tomatos
  • 1-2 tins of cannelloni beans ( i do like to add butter beans to my soup as well)
  • 2 bay leaves
  • 1 litre of vegetables or chicken stock
  • Fresh oregano and parsley
  • salt and pepper

Method

  1. Add the olive oil to a plan and add the bacon fry until crispy
  2. put the bacon on a piece of kitchen paper and keep until serving the soup
  3. Chop all the vegetables into cm chunks and add them to the oil
  4. fry them gently for 5 minutes on a medium heat, stir every 1 – 2 minutes
  5. add the beans, bay leaves, herbs and plum tomatoes and stir
  6. add the stock
  7. leave to simmer for 30 minutes
  8. add salt and pepper to taste
  9. Serve up with some extra protein and sprinkle some freshly chopped parsley and the bacon on the top
