Scrambled eggs

This is my go to breakfast when I’m in a hurry.

Ingredients (serves 1)

  • 3-4 large free range eggs
  • a bit of butter ( i use kerrygold)
  • (don’t add butter if you are diary free just make it with out)

Method

  1. Crack up tow eggs into a bowl and whisk until mixed
  2. add to a sauce pan or frying pan with the butter
  3. Stir slowly until it is just the way you like it.
  4. Serve up with avocado, ryebread, figs, apple, tomatoes, asparagus, kale or what ever you can think of
