Chicken burgers

Ingredients (serves 2)

  • 500 grams of mince chicken meat (you can use turkey or pork if you prefer)
  • 2 finely chopped spring onions
  • 1/2 freshly decided and finely chopped (medium hot) chilli
  • a bit of fresh parsley (i use parsley as i dont like coriander but you can use coriander if you prefer)
  • salt and pepper


  1. Mix the mince with the chopped spring onion, chilli and parsley well
  2. when it is fully mixed together form 4 burgers using your hands
  3. sprinkle with salt and pepper
  4. Cook on a non stick frying pan on a medium heat until cooked through (this will be about 4-6 minutes on each side)
  5. Serve on a bed of lettuce and peashoots, with tomatoes, cucumber and avocado
