Chicken Curry

Ingredients (serves 1)


  • 2 chicken breasts fried in coconut oil
  • 1 tsp Garam masala
  • 1/2 tsp cumin
  • 1 cinnamon stick
  • 1 tsp medium curry powder
  • 1 tin of coconut milk
  • 1 tsp of coconut oil


    Vegetables (cut into long sticks)

  • 1/2 pepper (any colour)
  • 10 green beans
  • 10 sugar snaps
  • 4 mini sweet corns cut in half
  • (you can add any vegetable you like)


  1. Heat up a pan to medium to hot heat
  2. melt the coconut oil
  3. Cut the chicken into chunks
  4. Add spices (not the cinnamon stick) to the oil and heat them up (but dont burn them)
  5. add the chicken and stir well
  6. when the chicken is golden add the coconut milk and the cinnamon stick
  7. let it simmer for 20 minutes or until chicken is tender and cooked through (you can cook it for longer tho it will just make the chicken better and fall to pieces)
  8.  2 min before serving add your vegetables (cook for  longer if you don’t want them crunchy)
  9. Serve with cauliflower rice or roasted cauliflower
