Chia seed pancakes

Ingredients (serves 2)

  • 2 eggs
  • 100 ml milk
  • 2 tbsp of Skyr or greek yoghurt
  • 1 tbsp of honey
  • 2 tsp chia seeds
  • 150 ml buckwheat flour
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 small pinch of salt
  • 1/2 tsp baking powder

Method

  1. wisk the eggs together with the buckwheat flour
  2. add the skyr or greek yoghurt and stir well
  3. add the rest of the ingredients and keep stirring well until smooth
  4. Leave to rest for 5-10 minutes
  5. heat up a a frying pan and pour a small pancake
  6. let it cook until it becoming golden
  7. turn it over and give it an extra minute until cooked through

Serve it with fruit
