Chocolate pancakes

INGREDIENTS (SERVES 1-2)

  • 2 eggs
  • 1 soft banana
  • 200 ml oats
  • 2 tbsp skyr or natural yoghurt
  • 1 1/2 tbsp cacao powder
  • 2  tsp vanila extract
  • 1/2 tsp grounded cinnamon or 1 tbsp of honey
  • 1/2 baking powder
  • 10g Dark chocolate (70%) (finely chopped)

METHOD

  1. Mash your banana
  2. add the eggs into the mashed up banana
  3. add all the other ingredients (except the chopped up chocolate)
  4. mix together until the batter is smooth or mix it all in a blender if you have one
  5. Leave to rest for about 10 minutes
  6. heat up a frying pan (ideally tefal or use a little butter or oil to fry in)
  7. Pour a small pancake (or more if you have room) on to the frying pan
  8. add a little chopped chocolate on top
  9. cook until it starts to become golden, flip it until and cook for a minute or so until cooked through

Serve with fresh fruit and some chocolate sprinkles
