• Butter
  • 2 medium potatoes or sweet potatoes
  • 1 large onion or 1 leek
  • 10 large eggs
  • Salt and pepper (to taste)
  • 1 dash (1 to 2 table spoons) of single cream (if you can have dairy)


  1. Peel the potatoes into thin even squares
  2. Preheat the the oven to 180 (but I don’t always bother)
  3. Boil the potatoes until the are soft, drain off the water
  4. Melt butter in a frying pan and fry potatoes until golden
  5. Place the potatoes in a non-stick pan or cast iron skillet (needs to be able to go in the oven)
  6. Add small chopped onion or leek and fry until tender
  7. Whisk the eggs in a bowl with a small dash of cream. Season with sale and pepper and pour over the potatoes
  8. Cool on the hob for about 5 mins and then transfer to the oven for 15-20min or until done. Check it regularly
