I love Waffles
Ingredients (makes 8-9 waffles)
- 1 large banana
- 7 eggs
- 100ml oats milk (any milk is fine, but dairy milk has a lot more protein) **
- 300 ml oats***
- 1 tsp of Baking powder
- 2 tsp cinnamon (optional)
- 1/2 tsp of vanilla
- A pinch of good quality salt
- Coconut oil/ extra virgin olive oil for your waffle iron.
Put it all in your blender and blend it together until the batter is smooth and then make the waffles using you waffle iron.
**instead of milk you can use 200g of cottage cheese which will give extra protein.
*** I like to do 50/50 oats and buckwheat flakes and sometimes if I want it to without oats I use 100% buckwheat flakes or flour.
Buckwheat is amazing and if you have sensitivity to grains or proteins like gluten it is a great replacement to other grains.
Despite the name, buckwheat is not related to wheat, as it is not a grass. Instead, buckwheat is related to sorrel, knotweed, and rhubarb.
It is also high in nutrients so worth to introduce to your diet if you haven't already.
