My Giant Salad

I love these salads. They are huge and filling and the best thing is you can swap all the toppings with other vegetables to mix it up.

Ingredients

  • 1 handful of spinach
  • 1 handful of lambs lettuce
  • 1 handful of romaine salad
  • 1/2 handful finely chopped celery
  • 1/2 handful cucumber
  • 1/2 handful peppers
  • 1/2 handful peas
  • 1/2 handful Edame beans
  • 1/2 handful apple
  • 1/2 handful carrot
  • 1/2 handful tomatoes
  • 1/2 handful raw romanesco broccoli
  • 1/4 handful of pomegranate 
  • 1/4 handful of chopped almonds
  • 1/2 avocado
  • served with a little extra virgin olive oil and lemon juice.

Method

  1. Place all the leaves in the bottom and place everything else on top.
  2. drizzle the extra virgin olive oil and lemon juice on top 
  3. Then add your chosen meat to the salad or have it next to the salad.
