My Giant Salad
I love these salads. They are huge and filling and the best thing is you can swap all the toppings with other vegetables to mix it up.
- 1 handful of spinach
- 1 handful of lambs lettuce
- 1 handful of romaine salad
- 1/2 handful finely chopped celery
- 1/2 handful cucumber
- 1/2 handful peppers
- 1/2 handful peas
- 1/2 handful Edame beans
- 1/2 handful apple
- 1/2 handful carrot
- 1/2 handful tomatoes
- 1/2 handful raw romanesco broccoli
- 1/4 handful of pomegranate
- 1/4 handful of chopped almonds
- 1/2 avocado
- served with a little extra virgin olive oil and lemon juice.
- Place all the leaves in the bottom and place everything else on top.
- drizzle the extra virgin olive oil and lemon juice on top
- Then add your chosen meat to the salad or have it next to the salad.
