I love my vegetable box

On Wednesday I will receive my ugly veg box from company called Grim. (translates to ugly in english)

I love this food box because it is organic vegetables, fruits and even herbs that has either been overproduced or is too ugly to sell in supermarkets.

This weeks box it includes: 

  • 1 kg carrots 

  • 0.8 kg yellow onions 

  • 0.15 kg flower sprouts 

  • 3-5 green zucchini 

  • 1 kg tomatoes 

  • 1-2 kohlrabis

  • 1 cauliflower

  • 7-10 Washington Navel oranges 

  • 1 endive salad 

I have to say I’m so excited to see flower sprouts in this week’s box, it is my favourite vegetable at the moment. 

They are a cross between Brussels sprouts and kale and are a highly nutritious vegetable that may be eaten as raw or cooked.

I love eating it raw or grilled in the oven with a little olive oil, lemon and a pinch of salt.

This box will give me lots of dishes to go with our meals like this:

  1. I will be making my vegetable and quinoa stew using some of zucchinis, tomatoes, yellow onions, cauliflower.

  2. Grated carrot, kohlrabi and apple salad with squeezed orange juice over.

  3. Raw and Grilled cauliflower to have a side dish.But I will also add cauliflower to my curry this week. 

  4. Grilled tomato soup or what we call Pernille’s (that is my cousin)tomato soup, as she introduced us to making tomato soup and sauce this way. 

  5. I’m not sure how I will end up using the endive salad but I’m loving the look of this Jamie Oliver salad so I might make my own version of it. 

  6. I will be juicing most of my oranges for fresh juice for the weekend. 

  7. We eat a lot of carrots each week so I love that we are receiving a kilo. I will roasting them, grating them, cutting them up to keep in water in the fridge for the girls to snack on and adding them to my smoothies.

I will be trying to have at least 4-6 items from this box as part of our evening meal. I aim to eat 20+ veggies a day and this box makes that so much easier and it challenges me to try new things which I love.
