My new muffin recipe

In my attempt to mix up our breakfasts I have started making these fluffy and light muffins that is also high in protein.

We all love them and have started having them instead of danish pastry at the weekend because they taste amazing but also we do not get a sugar crash after eating them.

Here is my recipe and as all my recipes they are flexible so you can tweak them so they suit you and your family:

  • 6 eggs (separate the whites and yolks)

  • 11/2 tablespoon of sugar (in the whites) this is optional though

  • 200 ml (only had a measuring jug) of flour

  • 1 large tsp of baking powder

  • 200 ml of milk of your choice

  • You can also add a scoop or two of your preferred protein powder to increase the protein. I personally always use unflavoured protein powder so I don’t know what they will be like with an added flavour.

Method:

  1. Mix the whites and sugar until it goes stiff

  2. Mix the flour, baking powder, yolks and milk together until smooth

  3. Turn the mixes together and add Chocolate pieces.

  4. Put into cupcakes holders and bake until light brown and cooked through

  5. Mine take about 10 minutes in my oven on 200 degrees.


I also really like them fruit in them but my girls prefer dark or light chocolate.
